Vintage: The Sauvignon Blanc grapes for this wine
come from a vineyard on the southernmost slopes of the
Elim wine ward. We call this specific vineyard “Pofadder
Bos Sauvignon Blanc” due to frequent encounters with
these snakes in the surrounding fynbos. The soil is
almost 100 % “Yellow ferricrete” which helps add to the
unique terrior of this vineyard. The grapes were
handpicked at optimum ripeness on the 13th of February
2007. The second component of this wine was made from
Semillon planted in quartzite soils. This combination
ensures a perfect blend of flintiness and fruit.

Vinification: Innovative wine making techniques:
Sauvignon Blanc cold fermentation with selected yeast
strains in stainless steel tanks and Semillon barrel
fermented and matured for eight months on the lees, a
selection of 300 and 400 L French oak barrels.

Tasting comments: Wet gravel with an intense
flintiness combined with green fig aromas. Full and
creamy on the palate with a dry minerality on the
