VINTAGE: A dry winter spell was
broken by good spring rains. This led to normal bud break and
excellent growing conditions throughout the spring. Mid summer
brought dry warm weather with some hot days, accelerating the growth
cycle. By mid February the grapes where hand picked at an even
ripeness of 25°B.
CELLAR REPORT
Grape varietal: 95% Shiraz ; 5%
Cabernet Sauvignon.
Age of vines: 3 – 8 years
Clone: SH21; SH22; SH99B; SH5C
Vinification: After destalking
and minimal crushing of berries they were left to cold soak for
48hours. Fermentation with selected Rhoné yeast strains. Temperature
controlled at 24-28°C. Pump-overs effected thrice daily. Barrel
matured for 14 months in 100% French oak.

Wine analysis: ALC. 14.2%alc/vol;
pH 3.63; TA 6.22g/l; Sugar 2.8g/l.
Tasting comments: A full-bodied
wine with rich and lingering, gamey aromas layered with dense berry
fruit flavours. Concentrated, spicy mouthful backed by well-
integrated oak. The wine is drinking well now, but will develop
further with 3-5 years bottle maturation. Enjoy with food dishes
such as roast beef, duck and venison. |
